My Morning Mojito Smoothie

Virgin mojitos are always my go to cocktail at a bar when I don’t know what to have, as I really love the fresh lime and minty flavors.  They are especially yummy when they are mixed with tropical fruit like passion fruit or mango (which is where the inspiration for this smoothie came from). This healthy smoothie combines all the fresh ‘pick me up’ vibes from a classic mojito, expect it is packed with real fruity goodness and nutrients.

This recipe is bursting with delicious flavors and a powerful super food that will definitely help start your day with a boost. The tropical flavors of the mango and pineapple add a lovely sweet but sour flavor, which works really well at disguising the strong kale flavor (if you are someone who doesn’t like the taste of kale that much) This recipe is very simple, easy and quick, so is perfect for any mornings; from a weekday rush or on the go breakfast, to a more relaxing weekend morning.

So lets get started….

First of all I like to prepare and chop all of my fruit and vegetables. You will need around a 1-inch thick round slice of pineapple. Then you will need to remove the tough green skin and chop the pineapple into rough chunks. You will then need to half a mango, remove the skin and chop it into chunks.

I then took a handful of lovely fresh mint leaves off their stalks, and got large handful of kale, and washed them both under cold water to wash off any dirt. Once all the fruit/veges are ready, you are now ready to add all the ingredients to your blender (I used a Nutribullet for mine).

Add the mango, pineapple, kale, mint, the juice of one lime, and a tsp of honey to your blender. Now you are ready to add the chia seeds to the mix and the super food spirulina powder.

Chia seeds are great as they add extra protein and nutrition to the smoothie, and the spirulina is high in chlorophyll, so will help to flush out toxins from the blood, therefore acting as a natural detox. PLUS it also helps to boost your immune system.

Once all your solid ingredients have been added to the blender, now you are ready to add the coconut water and a few ice cubes (to make it extra chilled). I would suggest adding the coconut water to the blender to around 1 inch under the level of all the ingredients. I would say this would be around 1 small glass. You are now ready to whiz it up and blend it all together until it’s smooth!

Once it is all blended, you can now drink it and enjoy!

This smoothie is a lovely light and fresh vegan alternative to switch up your morning breakfast, and it is FULL of goodness! This is a lovely cool drink that will be perfect for those bright spring days, and hot summer months. It could even be a lovely idea to serve your guests at a barbecue instead of normal juices.

Mojito Smoothie

  • 1/2 a mango
  • A 1 inch thick slice of pineapple
  • 1 large handful of kale
  • 1 handful of fresh mint leaves
  • The juice of 1 lime
  • 1 tsp of honey
  • 1 tbsp of chia seeds
  • 1 tsp of spirulina powder
  • 1 small glass of coconut water
  • A few ice cubes
