Delicious Acai Breakfast Smoothie Bowls

Acai bowls are a delicious, nutritious and healthy way to start your day (or even for a snack or dessert after dinner). They are unique, and you can really have fun with them and make it your own; from blending the acai with different ingredients like mango or banana, to adding a variety of toppings, from granola to chocolate chips.

So firstly I would suggest that you choose your selected toppings and get them all ready before you make your sorbet, so that you don’t have to sort them out after and let the sorbet melt.For this recipe I have chosen some sour fresh mango (chopped or diced) and some left over stewed apple puree that I made the day before. I made the stewed apple puree by simply stewing an apple with a splash of water, on the hob at a low heat in a saucepan for around 20 minutes until soft and mushy. To jazz it up a little you could always add a tsp of honey or even some cinnamon. I also added fresh pomegranate seeds, desiccated coconut (you could use toasted coconut flakes too) and mixed seeds/nuts (I have a tasty omega blend from Holland and Barratt that has linseed, pumpkin seeds and sunflower seeds, plus I added some chia seeds and almond for extra protein). I also added some simple muesli that I had in the cupboard (but before I have added one of my delicious granola recipes like the one mentioned in this blog); the muesli had toasted oats, buckwheat puffs and goji berries.

Once I had selected my toppings, I put them into some small bowls so I could clearly see what I had chosen (This is a great idea if you have a few people over for breakfast/brunch, so you can place lots of yummy toppings into bowls for your guests to choose what they want.

Normally when I make my bowls, I only put the fresh chopped ingredients into bowls to contain them whilst I make the sorbet, and just add the dry stored ingredients straight to the acai bowl when it is ready.

So how to make the acai sorbet?

Take the acai (or acai mixed with guarana if you have that instead) out of the packet, chop the frozen block in half, and place in the blender. Add the freshly chopped mango and a splash of water to help it blend, and blend until a lovely thick smooth sorbet-like texture.

Once blended, scoop out the thick icy delicious sorbet, and put in the serving dish of your choice (I like a nice shallow bowl).

Once you have topped your acai sorbet smoothie bowl with your favourite toppings of choice you are ready to enjoy!

Acai Sorbet

  • 1 packet of frozen 100% acai
  • ½ a fresh mango roughly chopped

Toppings

Approximately 2 tbsp of each topping

  • Freshly chopped mango
  • Fresh pomegranate seeds
  • Stewed apple puree
  • Mixed seeds and nuts
  • Muesli
  • Desiccated coconut

There is such a large variety of what you can put on your acai bowls, so you can really play around with your toppings! I made this delicious breakfast for my friend this weekend, but she prefers fresh strawberries and pineapple, so I topped her bowl with those rather than pomegranate and coconut.
