Bloomin’ Tasty Banana Bread

If you are a baking lover like me, but sometimes just want a fool-proof simple recipe that is quick and easy to make, BUT SUPER DELICIOUS, then look no further.

This banana bread is bursting with flavour, with a crunchy crust and a super soft and moist middle! Definitely worth a try if you want to make a simple but delicious cake for a friend’s birthday, a family lunch or just a weekday treat- PLUS as you don’t need to weigh anything it makes it even easier! 

 

So let’s get started…

First of all pre-heat the oven to 170 degrees celsius. Soften your butter to a malleable texture room temperature would be great), and mix in a bowl until soft. Then add your sugar and vanilla extract to the bowl and whip together until light and fluffy.  Mash the bananas until paste-like and add to the sugar/butter mixture and mix well.

Beat together your eggs in a separate bowl, then also add to them sugary butter mixture, and combine.

Sift out your flour, salt, nutmeg and baking powder in a separate bowl, and mix together. Once mixed, fold in the dry ingredients to the wet ingredients carefully (make sure to not over whip the mixture to keep a good about if texture to the bake).

Line a loaf tin baking tray with a layer of butter and a dusting of flour (to help the cake slide out easily after baking), and pour in the cake batter. Slice the last banana and top your cake batter with the slices in a pattern of your choice. Roughly chop your chosen mixed nuts and sprinkle over the top of the cake.

Once the banana loaf is ready to cook, place it on the lower middle of the oven and bake for 1hr – 1hr 10 mins (depends on your oven strength- if you like a squidgey cake then go for the shorter baking time). Check the cake is cooked by placing  a clean skewer into the cake and if it comes out dry then then cake is ready *note this cake can be quite moist due to the amount of bananas, so sometimes it might seem like it’s under baked but if you leave it in the tin to cool it will be perfect).

 

Once the cake is ready, leave to cool and serve how you like. Whether that is cold on its own with a cup of tea, toasted with almond butter for breakfast, or warm with vanilla ice cream for dessert.

  • 1 mug of sugar
  • 2 eggs
  • 2 TSP vanilla extract
  • 1/2 a mug of butter
  • 4 medium bananas
  • 1 1/2 mugs of plain flour
  • 1 TSP baking powder
  • 1 TSP nutmeg
  • 1/2 TSP salt
  • 3 TBSP of chopped mixed nuts of your choice (optional)
