Valentines Raspberry Chia Parfait Breakfast

I hope that you all have a wonderful valentines day filled with people that you love, whether they are your best friends, family or boyfriend/girlfriend.

If your looking for an extra special valentines themed breakfast/brunch or even dessert to make your loved one this year, then look no further. This is the perfect, healthy but delicious, and just BEAUTIFUL breakfast. It is sweet, creamy, crunchy and fresh; PLUS it is healthy, vegan, dairy free AND gluten free.

This chia pudding/parfait is packed with nutrients, from the protein filled chia seeds, to the antioxidant rich raspberries, pomegranate and strawberries, and the healthy fats in the coconut yogurt.

To make the chia pudding part of the parfait, you will need to soak your chia seeds overnight in liquid to make the pudding mixture.

For this recipe, I used vanilla almond milk, but you can use any dairy or non dairy milk of your choice.

  • 1/2 a cup of almond milk
  • 1 large handful of raspberries
  • 2 tsp honey

 

 I blended the almond milk with an extra large handful of berries (I chose raspberries), and some form of sweetener, until smooth. I used a tsp of honey, but you could use maple syrup or even a couple of soft medjool dates if you prefer. Once the mixture was all blended, I mixed in 1/6 of a cup of chia seeds, and let them soak in the fridge for a minimum of 2-3 hours (until it makes a sort of ‘gel’).

Once the chia pudding was ready, you are now ready to construct your lovely layered parfait.

You can really layer the parfait in the order that you prefer, but I will share with you how I choose to layer mine. I chose a sundae glass to serve my parfait, but you could even just use any glass that you have available. I started with a large tbsp of my chia pudding gel mixture, and then I added a large tbsp of freshly chopped strawberries. On top of the strawberries, I added a BIG tbsp of the lovely creamy coconut yogurt (you could use any yogurt of your choice – from vanilla soya yogurt to dairy yogurt). On top of the yogurt, I them layered on a heaped tbsp of lovely defrosted raspberries (I took them out of the freezer half and hour before I made the dish), and another BIG tbsp of my ‘Vanilla Cranberry and Orange Granuesli’ (you can use any granola of your choice) See my recipe here.  I then repeated this process to fill up the glass.

Once the glass is filled, you can top it with a some extra yogurt and any beautiful toppings of your choice (from drizzled nut butter, to chocolate chips). For this valentines day, I chose some sour pomegranate seeds, a drizzle of honey and some grated orange zest to go with the flavors of my granuesli.

Raspberry Chia Parfait

  • 2 large handfuls of frozen raspberries
  • 2 large strawberries chopped
  • 3 large heaped tbsp of coconut yogurt (or any yogurt of your choice)
  • 2 large tbsp of ‘chia pudding gel’ (quantities above)
  • 3 large tbsp of granuesli/the granola of your choice
  • Honey
  • Toppings of your choice AND an extra tbsp of yogurt for the top
