Vanilla Orange and Cranberry Granuesli

So……what is ‘Granuesli’?

It is the perfect combination of a sweet crunchy granola and healthy fruity muesli. It is packed with goodness to help start your day off right and give you energy throughout the morning.

I love rich and crunchy granola clusters, but it can often involve a lot of some form of sugar and oil, whereas muesli is often sugar free (apart from the added fruit) and not cooked; so I like to mix the 2 concepts together using half the amount of oil and sugar. With this recipe you get a super tasty and crunchy granola like cereal, with a more muesli like texture (as it is not in clusters, but rather just crunchy toasted/roasted oats) with dried fruits and seeds.

Making your own granola, muesli or granuesli is a great way to create something that is tailored to your needs and likes. Personally I don’t eat many nuts or raisins as they can irritate my skin condition that I have, so I often struggle to find a large variety of muesli or granola in the shops that doesn’t have nuts or raisins in; PLUS I prefer to have less sugar in my cereal anyway (than the ones available in most supermarkets) which is why I started to design my own. It can be as fruity or seed packed as you like (you can even add nuts too), and it can be as sweet or spicy as you like- its totally up to you, which is why I LOVE making my own!! Below is the recipe for one of my favvvooourritte granuesli creations, so I  really hope you enjoy it!

First­­ of all pre heat your oven to 170 degrees Celsius.. Then I put all my dry ingredients into one big mixing bowl (the oats, wheat bran, puffs, mixed seeds, salt and maca powder). As mentioned above you can use any type of puffs you like, from lovely honey puffed oats to simple buckwheat puffs. If you cant find these don’t worry it is not necessary for flavour, it is more for that extra nutritional value. To substitute it, just add another ½ cup of oats. I use maca powder as it is a fantastic super-food supplement and really help balances hormones for us ladies out there, which is why I love to add it to cereal.

Once all the dry ingredients are in a bowl and mixed, its not time to prepare the wet ingredients. So first if all I would melt the coconut oil in a heatproof dish for 30-45 seconds in the microwave, and then once melted add the maple syrup,vanilla extract, orange zest and the orange rapeseed oil. I LOVE this orange rapseed oil that I use (its from Mr Hughs), as it really does have a beautiful orangy flavour (that tastes real not like a lot of flavorings) and I used it A LOT in my baking. If you cant find it, I would suggest replacing it with 2 tbsp more of melted coconut oil, and take the zest of 1 more orange (or a tsp of orange essence if necessary).

img_29071 Once all the wet ingredients and nicely mixed together, add them to the big bowl of dry ingredients and mix until all the oats and dry ingredients look a little wet and have absorbed all the wet liquid. Once mixed, I line a baking tray with baking paper, smooth out the granuesli mix onto the tray and roast for 25 minutes at 170 degrees Celsius. After 25 minutes I add the dried fruit to the mix (as if you do it at the start the fruit will over cook or even burn) and then place it back into the oven for another 5/10 minutes depending on the fruit (goji berries especially burn easily).

Once the roasting is finished, take out the granuesli and let it cool in the tray until at room temperature. Once cooled, add it to your favourite desired container and store in a cool place for up to a month, and eat when desired.

For my breakfast in this recipe, I combined this tasty crunchy cereal with a thick and soft, dairy free 100% coconut vanilla yogurt.

I hope you all try this recipe at home, as it is a truly delicious and healthy breakfast alternative. It is sweet, zesty, crunchy and rich, PLUS its healthy and vegan for all you vegan lovers out there! BUT what makes this breakfast even greater, is that granuesli is so versatile and you can eat it in so many ways. From adding extra delicious toppings like coco nibs or fresh fruit, serving it up with the milk of your choice (dairy or dairy free) and a sliced banana on top, to having it with a nice thick Greek yogurt that is drizzled with honey and crushed nuts, or even on top of a smoothie or acai bowl.

You can even take it a step further if you are feeling creative and really customise some of the ingredients. From swapping out the cranberries or apricots for other dried fruit (and nuts too) of your choice, (or another tropical idea that I love – is adding dried mango, pineapple and some crunchy dried banana); you can even take out the orange and keep it simple – it is totally up to you!

Granuesli Ingredients

  • 2 cups of oats
  • 2 tbsp of wheat bran
  • 1 cup of puffs *(my chosen ones were buckwheat but you could use oats or spelt too)
  • 2 tbsp maca powder
  • ½ cup of mixed seeds *(my chosen seeds were pumpkin, linseed, sesame, sunflower)
  • ½ cup of coconut *(can be toasted flaked or desiccated)
  • 2 tbsp coconut oil
  • 2 tbsp orange rapeseed oil *
  • Zest of 2 oranges
  • A pinch of salt
  • 2 tsp vanilla extract
  • 4 tbsp maple syrup
  • ½ cup of dried cranberries
  • 1/ cup of goji berries
  • ¼ cup of dried apricots
