Tropical ‘Minty Passion’ Fruit Salad

This breakfast is fresh and healthy vibrant mix of sweet and sour fruits, that I’m sure will give you a boost and a lovely start to your morning. I am a huge lover of fruit salads; from breakfast to a snack or dessert after dinner. Fruit is one my my favourite things to eat! It is so versatile AND healthy, you can eat it fresh as something sweet, use it in cooking to add that extra flavour, or even add it to savory salads to bring some depth and sweetness to the dish.

There are hundredsssss of fruit salad combinations that you could make, but today I am going to share with you my tropical inspired ‘minty passion’ fruit salad.This recipe has some of the classic ‘tropical’ flavours but with an amazing dressing for that extra twist. From the lovely soft smooth bananas and mango, to the sour and vibrant pineapple and passion fruit.

So lets get started…..

Firstly, you will need to prepare all of your fruit buy washing, peeling and chopping as necessary. I used half a chopped mango in the fruit salad (and half for decoration that could be used later in another recipe – like in my acai bowls), some diced pineapple, a tbsp of pomegranate seeds (or 2 if you love these), a large handful of raspberries and 1/2 a banana sliced.

Once all the fruit is ready, place it in a large bowl, ready to add the dressing.

To make the dressing, I mixed together the pulp of a whole passionfruit,  juice of 1/2 a lime, 1/2 a sprig of finely chopped mint, and a tsp of some lemongrass and ginger cordial (to add extra sweetness and a little kick). Once the dressing is ready, add it to the large bowl of fruit and mix together all the ingredients well to make sure every peice of ruit is coated in the zesty sauce. If desired, chill the fruit salad for half an hour  in the fridge to allow the fruit to ‘marinate’ and soak up all the juicy sauce even more. Once this is complete, plate up the fruit salad on the plate of your choice.

If you are making this for guests, you could even add sprinkle of fresh mint leaves to the top and the half a mango (semi sliced) for decoration, to  make your tasty treat look even more beautiful.

Fruit Ingredients

  • ½ a mango diced
  • ½ a cup of pineapple diced
  • ½ a banana sliced
  • 1 tbsp of pomegranate
  • 1 passion fruit
  • a handful of raspberries

Dressing

  • ½ a lime juiced
  • ½ a passion fruit
  • ½ a tsp of lemongrass and ginger syrup/cordial
  • ½ a sprig of fresh mint finely chopped (and extra for decoration)
